SOIL GEOLOGY
The soils where the vines that produce the grapes for Alfaiate wine grow are essentially very old schists, dating from the Lower Carboniferous period (ca. 300 million years ago). They are poor soils with an acidic reaction, in which the roots of the vines penetrate deeply through the cleavage planes of the schist to the cooler lower layers. Their dark colors absorb solar radiation, which is released as heat at night, allowing the production of very high-quality grapes.

VINIFICATION
Manual harvesting, rigorous selection in the vineyard and winery, guaranteeing only superior quality bunches. Fermentation in stainless steel tanks with strict temperature control, promoting the gradual extraction of color, aromas and tannins. Extended maceration optimizes structure and complexity. After alcoholic fermentation is complete, gentle pressing follows, natural stabilization and clarification, preserving the typicity of each variety and the authentic expansion of the batch and the “terroir”.
